I have employees that I want to be able to do transactions, but I dont want them to see any of my information. I.E no bank, no sales totals, no or anything else. ONLY to swipe cards is that possible? Can I set up their phone to send money to my bank without them seeing or knowing my banking information or anything else?

There are two things to look at here.

One, Create a device code for them to use on their phone to access your store. This will limit what they can see. Help Page

Two, use Employee Permissions to restrict what they can do even fruther. This opion will cost you $5/employee. Help Page.
