What security is recommended for manually entering credit cards on an iPhone?

Can someone explain to me what security is recommended for manually entering credit cards on an iPhone?

Safe rule of thumb is to know the customer you're manually entering. If this isn't an option, I recommend having them sign something (a work order or something like that) stating that they authorize the transaction. Especially if it's a big dollar amount.
