If I deactivate a temporary, second location that I had set up for the holidays, will I lose all of the sales/payroll/loyalty information or will it still be accessible?

No, everything is still there. You don't need to deactivate it if you don't need to. I have three locations I only use once a year. I just leave them. Nothing happens with them because I don't have the app connected to them. Then when I am ready to use them again I sign in with the device code and go.
