We are considering shifting to using square to manage a bookstory with an inventory of several thousands of books. What would be a good next step for us to decide what we might need. Also looking for info on how to import existing inventory?

you can export download the spreadsheet template here https://squareup.com/dashboard/items/library. doing it a spreadsheet program will be way faster than entering into the POS on the iPad.
I would recommend adding an item and then downloading it so you can see what information goes where etc.

As for what you need depends on what you want to do.
I have the following setup 3 times in my store:
Square Stand
iPad
Ethernet printer
Cash drawer that hooks to the ethernet printer
Square contactless reader
the total is about $700 depending on sale prices on iPads. new ones list at $329 but can be found on sale at walmart and Target for $249.
