self serve ordering limits

Regarding Self-Serve ordering from QR codes in a restaurant setting, is there a way to:

 

1. Limit the orders to the kitchen per 15 minute interval (note this is for in-house dining, not delivery or curb side pick-up).  Essentially when the kitchen gets slammed, they don't want to many order tickets printing all at the same time.  

 

2. When we have more than say 15 orders in que, have an automatic message (before the client checks-out) saying there is an estimated 30min wait for food.  When there are 30 orders in que, have a message saying their is a 45 min wait for food.  Obviously we don't need or want this message for drink orders as we can get those out fast.  

 

1. We run into two problems at our business.  At 5pm we get 50+ orders hitting the kitchen within a 10 minute window, and the kitchen can get overwhelmed.  

 

2. We also have a live theatre across the street, so when there are shows, people order food at our establishment expecting it to arrive fast. When 100+ people all come right before a show and have to wait up to an hour for their food, they get grumpy about the food coming late or not getting it before the show starts.  And because they ordered on the QR system, no one has let them know about the wait time and they have also already paid (huge problem when your slammed and people need refunds because they didn't know the wait would be as long as it was).
